The Ultimate Chocolate Cookies

It's no secret I have a massive sweet tooth, so when thinking of what to bake this morning I knew it needed to include chocolate.  I remembered an instagram post from Vivianna Does Makeup a few months ago so hunted through her blog for the recipe and made these delights!

The following recipe is from Anna's Cookie Monster post two years ago - I can't believe it's taken me this long to make them! - but they were so good I needed to show you myself.

For 12 Triple Chocolate Cookies, you will need:
- 200g unsalted butter
- 300g caster sugar
- 275g self-raising flour
- 75g cocoa powder
- 3 bars of chocolate (I used Dairy Milk, Lindt Dark with Sea Salt, and Lindt White with Vanilla)
- 1 egg
- Splash of milk

The method is incredibly easy but requires a bit of elbow grease!

First things first, preset your oven to 200°C.  Start by softening your butter, either by leaving it on the side for 10 minutes while you prep your other ingredients, or stick it in the microwave for a few seconds.  Combine the (now nicely softened) butter and sugar in a mixing bowl!  Either use an electric whisk or a wooden spoon (or, like me, use a balloon whisk then have to give up after a few minutes and switch) to mix until creamy.

Next, add an egg, mix through, and add the remainder of your dry ingredients.  I found it easier to mix in the softer ingredients first, then once it's smooth to add the chocolate bars.

This takes some perseverance, but once the mixture is combined add your choice of additions.  You can go with dried fruit, peanut butter, anything really.  I stuck to all chocolate for this one!  Chop them up into bite-size pieces and add into the bowl, stirring well.

Add a splash of milk to make it a bit more of a doughy consistency!

Now to get your hands dirty!  Scoop out a small handful of the mixture and roll into a ball, placing on a baking tray.

We got about 4 on each tray, so made 8 in the first round and the other 4 afterwards.

Now just put them in the oven for 10 minutes!  Feel free to spend the whole time staring into the oven like James did.

As difficult as it is, it's now important to leave them to set for at least 30 minutes.  Otherwise they'll just collapse in your hands!  After that dreaded half-hour is over you can dig in to your delicious cookies.
